Roasted Blackberry and Basil Margaritas (and the Weekly Menu)

Given that today is Cinco de Mayo, I felt compelled to ditch the usual weekly wrap-up and share a Mexican recipe with you instead.  What sort of food blogger would I be if I overlooked a holiday centered on food and drinks?  Coincidentally, we're headed to a Cinco de Mayo stock the bar party for my sister and her fiance this afternoon, giving me the perfect excuse to make a big 'ole batch of margaritas on a Sunday.  


 I certainly cannot show up to a party empty handed.


 And by empty handed, I mean without adult beverages.


 And, of course, said adult beverages must include tequila on the 5th of May.


The blackberry and basil are just bonus.  



And they were damn good my friends.

Roasted Blackberry and Basil Margaritas:
Serves: 6-8
Total time: 40 minutes

Ingredients:
2 1/2 cups (18 ounces) fresh blackberries
1 bunch basil
1 cup lime juice (about 5 limes)
2 cups tequila 
1/2 cup Cointreau
1/2 cup simple syrup

Directions:
Preheat oven to 400 degrees.  Spread blackberries on a pan (I used parchment paper to minimize clean up).  Roast for 30 minutes.  Allow to cool.  Add roasted blackberries, basil leaves, lime juice, tequila, Cointreau and simple syrup to a food processor or blender and blend/process for approximately 1 minutes.  Strain through a mesh colander, pressing down on seeds with a spatula to press all juice through.  Serve over ice with a lime wedge.

And of course, I did not forget the weekly menu (which happened to be thrown together while riding home from Columbia - thank you smart phones!).

Friday:  Grilled Prosciutto Wrapped Scallops with Arugula Pesto Salad (recipe here)

Saturday:  Engagement Party for our good friends Chris and Kelly (well, at least Kelly is a good friend; the verdict is out on Chris)
