Sunday:  Seared Scallops with Shrimp, Herb and Spring Vegetable Risotto

Monday:  Beef and Spinach Baked Meatballs with Bolognese and Brown Rice Pasta (recipe here)

Tuesday:  Spicy Chicken and Spinach Enchiladas from Bev Cooks (recipe here)

Wednesday:  Lemon Herb Pork Tenderloin (recipe here)

Thursday:  Pork Tenderloin Stuffed with Chorizo, Roasted Red Peppers, and Manchego with roasted zucchini and broccoli

Friday:  Pad Thai with Shrimp and Chicken from Rasa Malaysia (recipe here)

Confession:  My birthday presents this year from Scott and my parents consisted of a 380 Ruger and a grill.   I believe I'm entering into my tomboy phase a little late in life.
