Last night I posted this on Instagram...


It may look like guacamole.  But it's actually egg salad, with avocado, and other stuff, but primarily creamy, dreamy avocado.  Now I know I usually do not post about food on Wednesdays, but this egg salad is too good to keep to myself.   
 
I am not presuming you don't know how to make egg salad, as I am sure you make a delicious egg salad.  Instead, I am hoping to inspire you to think outside of the traditional, hum drum egg salad box.   Although I did not use a recipe, my inspiration for the avocado egg salad came from a post a read from the Pioneer Woman a while back.  Why it has taken me this long to jump on the avocado egg salad train is beyond me.  I tend to be a little slow on the trends.   
 
So here is my not really a recipe, recipe for avocado egg salad:
 
Avocado Egg Salad
7 eggs, boiled and chopped
2 avocados, diced
1 tbsp. mayonnaise (I will probably omit this next time; you really do not need it)
3-4 tbsp. sweet relish
4 tbsp. Dijon mustard
Pinch of cayenne
Salt and pepper to taste
 
Mix ingredients together and eat.  As you can see, it's too simple to qualify as a recipe.  It's really just an idea; albiet a very good idea.  Experiment with the ingredients.  Next time I might try using fresh dill weed and dill pickles instead of the sweet relish and cayenne.  You could also use one less avocado for thicker, chunkier egg salad.
 
Oh, and I did work out today.  Scott tried something a little different and gave me one big circuit to do as many rounds as possible in 40 minutes.   It looked like this:
 
1.  Circuit:  AMRAP in 40 minutes, one minute rest between each round (no rest between sets):
     - Turkish Get-ups with a 40 lbs. sand bag; one per side
     - Bench press 85 lbs. x 5
     - Lunges 15 lb. kettle bell in each hand x 6 per leg
     - Single arm rows 25 lbs. x 8 per arm
     - L sit-ups (Glute Ham Situps) x 10
     - Landmines x 12 per side
     - Prowler low handles 15 yards x 2
 
I forgot my camera, and I won't bombard you with grainy iPhone pictures.   However, I will share one picture from the end of the workout when I was completely spent and could barely move or breathe...
 
 
This didn't help.
