Weekly Menu:

Sunday:  Bolognese Sauce with Spaghetti Squash and Sauteed Spinach (adapted from Emeril Lagasse's Bolognese)

Monday:  Hamburgers with organic ground beef topped with Drunken Pimento Cheese (recipe here) and sweet potato fries

Tuesday:  Baked Chicken Parmesan from Ellie Krieger (recipe here)
** UPDATE: This recipe makes a flavorful, lightened-up Chicken Parm, and it was so easy.  I recommend the Kirkland Marinara from Costco.  One of the best bottled marinaras I have ever tasted (I do not like sweet marinara).  More on my Costco obsession to come...

Wednesday:  Lemon and Herb Marinated Pork Tenderloin

Thursday:  Chicken Stir Fry with Red Peppers and Broccoli

Friday:  Dinner at Salt Water Creek Cafe

Saturday:  Engagement Party for my good friend Lindsey
